Butterscotch Pecan Cookies
3/4 cup + 1T butter, softened to room temperature
1/2 cup powdered sugar
1/4 teaspoon salt
1 3/4 cup all purpose flour
6 oz. butterscotch chips
1 cup pecans, finely chopped
1 cup powdered sugar
1 teaspoon rum extract
1/4 cup pecans, finely chopped
3-4 T. milk
Cream butter with powdered sugar. Add flour and mix well. Add butterscotch chips and 1 cup chopped pecans.
Shape dough into balls using small cookie scoop or 1 teaspoon of dough. Place 1 inch apart on ungreased cookie sheet.
Bake in 325° oven for 15 minutes or until firm, but not brown.
Rum Glaze Topping
Mix sugar, extract, pecans and milk until smooth mixture.
You can either dip cookie in glaze or drizzle a small amount on top of cookie and top with chopped pecans.
