Date Tamarind Chutney

Ingredients

1 cup dates, chopped (medjool)

1/4 cup seedless tamarind or use tamarind paste

3/4 cup jaggery (or brown sugar will substitute)

1 teaspoon red chili powder

1 teaspoon coriander powder

1 teaspoon ground cumin powder

1/4 teaspoon garam masala

salt to taste (black salt)

1 1/2 cups water + 1/2 cup
Directions
In a small saucepan, add the dates, tamarind and 1 1/2 cups water. Stir well. Cook for 3-5 minutes on low to medium flame until the dates and tamarind are soft. Let it cool.
Pass mixture through a strainer or sieve to remove any seeds or date skin - make sure you also save the water that that you cooked the dates/tamarind in. Press the pulp through the strainer. This is the most time consuming step. Date and tamarind pulp is ready.
In another pan, add pulp with the juice and the other 1/2 cup water. Add jaggery, red chili powder, coriander, cumin powder, garam masala and salt and stir well.
Cook for about 3-5 minutes on low flame. Allow the jaggery to melt and the mixture to thicken a bit.
Let cool and enjoy.
