Curry leaf powder is traditionally eaten in India with rice and ghee. It is so good that I decided that everyone should know about it and eat it. I start off using fresh curry leaves that I dehydrate and grind with roasted chilis and lentils into a powder that can be used to give any dish flavor. Sprinkle on popcorn, use it in marinade for chicken or fish. This makes any dish very tasty.
Note: Curry leaves and curry powder are not the same. There is absolutely no substitute for curry leaves – they are unique and cannot be replaced in a recipe with curry powder.
