Go Bananas - Banana Bread
I was always on the hunt for the best banana bread recipe. One that doesn't come out dry and stays moist the next day. This banana bread is my go to recipe. I modified the recipe from a few others and nailed this one.
1 cup + 2 T. sugar
1/2 cup oil
4 mashed bananas
2 T. creme fraiche or sour cream
1 teaspoon vanilla
1 2/3 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
Preheat oven to 350°
Cream together sugar, eggs and oil.
Add mashed bananas, creme fraiche and vanilla.
Mix dry ingredients together.
Fold wet ingredients into dry ingredients until combined.
Line loaf pan with parchment paper or grease and flour so the bread can be removed easily.
Pour batter into loaf pan. Bake @350 for 45-60 minutes until toothpick in center comes out clean.
Additionally, you can add 1/2 cup chopped nuts and make it a banana nut loaf.
