Ingredients
-
2 cups warm water
-
2/3 cup instant nonfat dry milk
-
2 packages instant yeast
-
Pinch of sugar for yeast mixture
-
¼ cup granulated sugar
-
2 teaspoons salt
-
⅓ cup butter, softened
-
1 egg
-
5 cups bread flour (can use all purpose flour)
-
¼ cup butter, melted to brush rolls
Directions
Using your Kitchen Aid mixer, combine water, milk, yeast and a ½ teaspoon granulated sugar to the bowl and stir until combined. Allow to rest for the yeast to proof. About 5-10 minutes.
Next, add the ¼ c. sugar, salt, butter, egg and 2 cups of the flour. Mix on low until combined. Switch to a dough hook and slowly add remaining 3 cups of flour until all the ingredients are well mixed. Continue to mix for 2 minutes to knead the bread. The mixture will pull away from the sides of the bowl.
If needed add ½ cup additional flour if the mixture has not pulled away from the sides of the bowl and formed a soft dough. Dough should not be overly sticky at this point.
Place the dough in a lightly oiled bowl and turn to cover the entire dough lightly with oil. Cover; let rise in a warm place until doubled in size - approximately 1 hour.
When dough is ready, remove it from the bowl and place on a work surface that is lightly sprinkled with flour.
Divide dough into two equal portions. Roll each portion into a square 12x12. Brush with melted butter. Using a pizza cutter, cut the dough into 4 equal portions. Cut each of the four squares into 3 equal strips so you have 12 sections.
Roll each portion into a small rectangle and place on a parchment lined baking sheet. Placing the tail end on the baking sheet.
Cover again with a kitchen towel and let rise in a warm place until doubled in size. Approximately 1 to 1 ½ hours.
Bake in a 375º oven for 15-20 minutes or until they are lightly browned.
Remove from oven and brush with melted butter while the rolls are still hot.
