Ingredients

1 ¼ cups warm water

1 package active yeast

1 teaspoon sugar

3 cups all purpose flour

1 teaspoon salt

2 tablespoons olive oil
Directions
In a stand mixer, add warm water, yeast and sugar. Stir to combine and let sit for 5 minutes until bubbly on top.
Add a kneading hook to the stand mixer and add flour, salt and olive oil and mix for 6-8 minutes. Remove from bowl and hand knead until dough is pulled together and soft.
Add dough to a slightly oiled bowl, cover and let rise for 1 hour or until doubled in size.
Remove dough and form into a square. Cut in half and then each half into four equal pieces. You will have 8 total pieces of dough.
On a lightly floured surface roll each piece of dough into a ball. Set aside and cover with a towel to rest for 10 minutes.
Cut parchment paper into 8 squares and roll each ball into a 6 inch circle.
Heat oven to 475 degrees. Place a pizza stone in the oven to heat.
Place pita on the parchment paper directly onto the hot pizza stone and bake. Pita bread should puff up. Bake for approximately 5 minutes or until pita has risen and is golden on top. You may need 3 more minutes.
