Sour Cream Mini Muffins
If you are in a pinch for time and want a quick muffin, I have you covered with this recipe. Three simple ingredients, yields a tray of muffins that will disappear.
1/2 cup butter, softened (1 stick)
8 oz. sour cream
2 cups Bisquick (or other pancake mix)
Preheat oven to 400°.
Beat butter and stir in sour cream. Gradually add Bisquick.
Spoon batter into greased mini muffin pan. Bake at 400° for 5 minutes.
Add 2 T. chopped herbs of your choice to make this a savory muffin recipe. Serve with butter.
