Never Fail Zucchini Bread

This recipe comes from my best childhood friend, Jenny. I've been making this bread for 30 years. It is the only recipe I ever use, it's that good!
Ingredients

3 large eggs

2 cups sugar

1 cup canola or vegetable oil

2-3 cups grated zucchini

Mix together then add;

3 cups all-purpose flour

1 teaspoon salt

2 teaspoons baking powder

2 teaspoons baking soda

1 T. cinnamon
Directions
In a large bowl, add the first three ingredients together. Stir to combine.
Mix all the dry ingredients together and add to the wet ingredients.
Fold in grated zucchini.
Pour into 2 loaf pans and bake @350° for 1 hour.
Serve with butter or cream cheese. Delicious!

When I bake smaller loaves, I bake for 30–35 minutes. Just until toothpick comes out clean.
