Ingredients

1 ripe avocado

1 tablespoon yogurt

2 garlic cloves, grated

½ lemon, juiced

Salt and pepper

2 eggs

1 teaspoon distilled vinegar

2 large handfuls of baby spinach

Directions
Avocado Spread
Scoop avocado into a bowl and add yogurt, grated garlic, lemon juice, salt and pepper and mash until you have a spreadable mixture.
Poached egg
Simmer water in a pan over low heat. Add 1 teaspoon of distilled vinegar. Crack an egg into a small bowl and gently slide the egg into the water. Cook for 3-4 minutes before removing with a slotted spoon.
Note: You can also use a small bowl filled with water and a splash of vinegar and add egg and microwave for approximately 45 seconds. You will have a perfect poached egg.
Sautéed Spinach
In a small saucepan, add olive oil and heat on low heat. Add spinach and a sprinkle of salt and pepper. Cook until the spinach is wilted. Remove from heat.
Assembling
Toast a slice of your favorite bread. Sourdough works great and hold up well. Drizzle toast with olive oil. Spread with avocado spread. Top with sautéed spinach, poached egg, and another drizzle of olive oil. Sprinkle with Dukkha seasoning and chopped chives.
