1 cup flour
1 T. baking powder
2 teaspoons granulated sugar
½ teaspoon salt
¾ cup milk
1 T. Oil
1 teaspoon vanilla extract
Powder sugar or cinnamon sugar for dusting
In a small frying pan, heat oil to 350 degrees.
Combine dry ingredients.
Combine wet ingredients
Mix together until you have a smooth batter. Drop by tablespoon into hot oil.
Cook until golden brown on both sides. Beignets will automatically flip over in the oil so both sides cook.
When browned, remove from oil and drain on paper towels. Roll in powdered sugar.
Yield about 24.
