Egg Bites with Cottage Cheese and Spinach

8 large eggs

½ cup cottage cheese

½ teaspoon salt

½ cup chopped baby spinach

½ cup chopped bell pepper (red or green)

2 tablespoons salsa
Directions
Preheat oven to 350 degrees. Line a muffin/cupcake pan with cupcake liners and spray with olive oil.
In a blender, add eggs, cottage cheese, salt and blend until smooth. Add the spinach, bell pepper and salsa and pulse until the veggies are small pieces.
Pour mixture into prepared liners. Bake the egg bites for 30 minutes or until they are firm. Allow to cool for a few minutes before removing from the pan.
Serve with a sliced tomato, spinach and extra salsa or your favorite toast.
Store in the fridge for up to one week. Reheat in the microwave for 30 seconds.
