Crispy hashbrown crust filled with fluffy eggs, melted cheese, and savory add-ins, baked until golden and comforting. It has everything you like baked into one quiche.
I have been making this as a family favorite for many years. It will become one of yours too.

Ingredients

1 - 24oz package of shredded hash browns (refrigerated, not frozen) or use fresh potatoes shredded

1/3 cup melted butter

1 cup pepper jack cheese, shredded

1 cup swiss cheese, shredded

1 cup diced ham

6 eggs
-
1/2 cup half and half or whole milk

salt and pepper

diced bell peppers (optional)
Directions
Preheat oven to 425°
Press hash browns into 10 inch pie pan and brush with melted butter. Bake @425 for 25 minutes or until hash browns are browning on the edge.
Remove pie pan from the oven and reduce oven to 350°.
Sprinkle cheese and ham into the crust and chopped bell peppers, if using.
Beat eggs, milk, salt and pepper. Pour mixture over cheese.
Put quiche in the oven and bake for another 45-60 minutes until center is firm.
Let sit for 10 minutes before cutting and serving. Enjoy!

I usually find the hash browns in the refrigerated section at the grocery store, near the eggs. You can also use the southwestern style hash browns that already contain the bell peppers and onions!
