Chocolate Chip Oatmeal Cookies
1 cup butter (2 sticks)
1 ¼ cups dark brown sugar
½ cup granulated sugar
1 egg and 1 egg yolk
1 teaspoon vanilla
2 cups flour
1 cup old fashioned rolled oats
½ teaspoon baking soda
½ teaspoon kosher salt
1/8 teaspoon cinnamon
1 bag semi sweet chocolate chips
Preheat oven to 325 degrees. Prepare cookie sheets by lining with parchment paper.
In a saucepan over medium heat, melt the butter. Remove from heat and add both sugars. Stir until sugar is combined and smooth. Chill this mixture for 10 minutes in the refrigerator.
While mixture is chilling, mix together all the dry ingredients, except for the chocolate chips.
Remove the pan from the refrigerator and stir in the egg, egg yolk and vanilla.
Add the dry ingredients and stir to combine. Add the chocolate chips and use your hands if needed to make sure the chips are distributed evenly.
Using a cookie scoop form 24 round balls. Roll the balls in the palm of your hands and place on cookie sheet. When complete, place cookie sheet in the refrigerator to chill for 30 minutes.
Remove the cookie sheets from the refrigerator and bake for 12-15 minutes. Remove from oven and cool.
