Strawberry Rhubarb Crisp

Ingredients

2 cups strawberries, sliced

4 cups rhubarb, cut into small pieces

½ cup sugar

1 T. Tapioca or cornstarch

¾ cup uncooked oatmeal

⅓ cup brown sugar

½ teaspoon cinnamon
-
¼ teaspoon nutmeg

¼ cup butter, melted
-
½ cup chopped nuts, walnuts, pecans, almonds
Crisp Topping
Directions
Preheat oven to 350 degrees
In a small bowl, combine the strawberries, rhubarb, sugar and tapioca and gently toss to combine.
Pour mixture into a greased 8-inch pan.
In another small bowl, combine all the topping ingredients. Spread over the filling. Bake at 350 degrees for 45 minutes-1 hour. Check rhubarb with a fork to make sure it is tender.
Serve warm dessert with a scoop of vanilla ice cream or whipped cream.
