In a pan over medium heat, dry roast chana, urad, toor dals and chilis until lightly browned. Add cumin seeds, coriander seeds, methi seeds, whole peppercorns and roast until fragrant. Add salt, asafoetida and anchor powder.
Cool mixture and grind to a powder.
In a pan over medium heat, dry roast curry leaves. Cool and grind to a powder.
Add the spice powder to the ground curry leaves and mix to combine.
