Ingredients

1 cup basmati rice

2 cups water

2 T. ghee

2 inch piece cinnamon stick

1 black cardamom

1 dry red chili
-
2 bay leaves

1 T. cumin seeds

salt to taste

chopped cilantro for serving
Directions
Heat a small pan and add ghee until melted. Then add cinnamon, cardamom, dry chili, bay leaves and cumin seeds. Fry these together for about 10-15 seconds. Add rice and water to pan and stir to combine. Add salt. Put the lid on the pan until boiling. Once boiling, stir again and reduce heat to simmer and cook for 7-8 minutes. Remove whole spices, except red chili at this point. Put cover back on and cook until water is absorbed another 2-3 minutes. Turn off burner and leave the lid on for another 10 minutes. Fluff and sprinkle with cilantro and serve.
