Pork Vindaloo (Instant Pot)


This is going to be a go-to for family and friends, its that good.  You need 25 minutes in your Instant Pot or pressure cooker for the most tender and flavorful main course.  

Course: Dinner, pork 

Ingredients

4 T. oil 

1 teaspoon cumin seeds

1/2 teaspoon black mustard seeds

2 onions, diced

1 serrano chili, minced

2 lbs. pork shoulder, cut into cubes

3 T. garlic, minced 

1 T. ginger, minced 

Spices

4 teaspoons paprika

2 teaspoons salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cardamom 

1/2 teaspoon black pepper 

1/4 teaspoon cayenne pepper, adjust to taste

4 T. white vinegar (Vinegar makes an excellent base for a marinade because of the acetic acid it contains. It is this acid which helps break down the tough fibers) 

3/4 cup water

Cilantro to garnish 

Directions

Add oil to Instant Pot and press the saute button. Add the cumin seeds and mustard seeds and wait until mustard seeds begin to pop. Add onions and serrano chili and cook until onion begins to brown. 

Add pork, garlic and ginger. Stir and cook until meat begins to brown. Approximately 2-3 minutes. 

Now, add the spices, vinegar and water and give this a good mix. 

Turn off saute and press the pressure button and turn to high for 25 minutes. Secure the lid and make sure the valve is turned to pressure. 

When finished, let the pot naturally release the pressure. 

Open lid and check the amount of liquid. If you like less liquid, turn on the saute button and cook for 8-10 more minutes. 

Garnish with cilantro and serve with rice. Prepare to be in food heaven!
