Raita (Yogurt with Cucumber)
2 cups plain yogurt
1 Persian cucumber, washed and grated or chopped finely
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon urad dal
oil to fry seeds and dal
2 teaspoons chopped cilantro, optional
In a small pan, heat oil and add mustard seeds, cumin seeds and urad dal. Cook until mustard seeds pop and cumin seeds and urad dal are lightly browned.
In a small bowl mix seeds into yogurt. Add cucumber and season to taste with salt. Add cilantro if using and stir to combine.
Serve and enjoy.
