Shallot yogurt is a creamy Greek yogurt the addition of dried shallots and garlic. It is great served with your favorite rice dishes or savory Indian or Persian dishes.

Ingredients

¼ cup dried shallots - soaked in water at least 4 hours or overnight and drained

3 cups of Greek yogurt

½ teaspoon salt

½ teaspoon white pepper

4 garlic cloves, minced

¼ cup chopped fresh mint, optional
Directions
Placed dried shallots in a measuring cup and cover with water. Allow to soak for 4 hours or overnight. Drain shallots and finely chop. Add to a bowl.
Add the yogurt, salt, pepper and garlic and stir to combine. If using, add chopped mint.
For best results, allow to set in the refrigerator for at least an hour to let the flavors combine.
Garnish with fresh mint and serve with your favorite rice or savory dishes.
