Ingredients

2 lbs. chicken tenders, cut into small cubes

½ lemon juiced

1 tablespoon garlic, minced

1 tablespoon garam masala

1 teaspoon kosher salt

4 tablespoons ghee or neutral oil

1 large onion, chopped (about 2 cups)

1 tablespoon sweet paprika

1 teaspoon cumin powder

¼ teaspoon ground cinnamon

¼ teaspoon cayenne pepper

2 teaspoons kosher salt

2 tomatoes, chopped

¾ cup heavy cream (or half and half)

2 tablespoons butter, salted

1 tablespoon cilantro, chopped for garnish
Chicken Marinade
For the sauce

Chicken Marinade
Add cubed chicken to a large bowl or ziploc bag. Add remaining ingredients and stir to mix, covering the chicken with all the spices. Set aside in the refrigerator for one hour or overnight.
For the sauce
Heat ghee in a large pan over medium/low heat. Add onions and gently brown, approximately 15-20 minutes. Reduce heat to low if they are browning too quickly.
Add minced garlic and ginger and cook for one minute until fragrant.
Combine all spices and add to onion mixture.
Add tomatoes and cook until soft. Add heavy cream.
With an immersion blender (or regular blender), blend mixture until you have a smooth sauce. Your sauce will be thick at this point.
Add marinated chicken to the sauce and gently simmer over medium-low heat for about 15 minutes until chicken is thoroughly cooked. If sauce is still too thick, add ¼ cup water to thin out the sauce.
Stir in butter and taste for salt.
Top with chopped cilantro and serve.
