Döner kebab is a popular Middle Eastern dish made from seasoned meat—usually lamb, beef, or chicken. Thinly sliced and served stacked in flatbread or pita with fresh vegetables and sauces like garlic yogurt or tahini.

Ingredients

1 white onion, pureed

4-5 garlic cloves

1 lb. Ground beef, lamb or a mixture of both

2 tablespoons yogurt

Strained onion juice from onion puree

2 tablespoons milk

½ teaspoon salt

Pinch of red pepper flakes

¼ teaspoon pepper

1 teaspoon fresh thyme

Pinch of dried oregano

2 tomatoes sliced in wedges

4 long green peppers, slit in half

Olive oil and salt

1 white onion, sliced thin

2 tablespoons parsley, finely chopped

Directions
Puréed onion
Add chopped onion and garlic cloves to a food processor and grind until you have a puree. Strain juice from mixture to add to meat mixture.
Meat Kebab
Add ground meat, strained onion juice, yogurt, milk, salt, red pepper flakes, pepper, thyme and oregano in a bowl and mix gently until combined.
Divide mixture into 3 equal portions and place each portion of meat between two sheets of parchment paper.
Roll each section of meat between paper until you have a thin, even piece of meat.
Remove the top sheet of parchment paper and roll the meat in the bottom section of the parchment paper. Place on a tray while you preheat the oven to 400 degrees.
On a second tray add the chopped tomatoes and peppers. Drizzle with olive oil and sprinkle with salt.
Add both trays (kebabs and veggies) in the preheated oven and bake for 25-30 minutes.
When finished baking, unroll the meat from the parchment paper and chop into large pieces.
In a non-stick skillet add 1 tablespoon butter and the chopped meat. Cook over medium heat until the edges of the meat are lightly browned. This will happen quickly.
Onion topping
Cut onion in half and slice into thin strips. Add chopped parsley, sumac and olive oil. Squeeze the mixture with your hand to incorporate the flavors.
To serve: Spread yogurt on warmed lavash or pita pockets. Add the tomatoes, pepper slices, browned kebab meat and onion mixture. Roll lavash in a burrito style or stuff the pita pocket with the ingredients.
