Ingredients: 3 cups raw corn kernels (about 4 cobs or fresh corn); 1 cup red onion, finely chopped; 1/2 cup cilantro, chopped finely; 1 medium jalapeño, finely chopped (seeds removed if you don’t like heat); 1/4 cup lime juice, fresh squeezed; 1 T. White wine vinegar; 1/4 teaspoon chili powder; 1/4 teaspoon ground cumin; 1/2 teaspoon salt; Avocado, chopped (optional)
