Crockpot Meatballs with Apricot Chili Sauce

Ingredients

1 lb. Ground beef

1 lb. Ground pork

1 small onion, grated

2 eggs, slightly beaten

1 cup bread crumbs (seasoned or plain)

2 tablespoons parsley, finely chopped

½ teaspoon garlic powder (optional)

1 teaspoon salt

½ teaspoon pepper

1 - 12 oz jar chili sauce

½ cup apricot preserves
-
1 tablespoon sriracha
-
1 tablespoon soy sauce
For the sauce
Directions
In a bowl, mix the meat and the remaining ingredients just until combined. Don’t over mix. Using a small cookie scoop, roll the meat into small meatballs. Set aside.
For the sauce
My favorite chili sauce
Mix all the ingredients in a bowl until combined. Set aside 1 cup of the sauce for topping the meatballs.
Add the remaining sauce in the bottom of a crock pot and top with the meatballs.
You should have two layers of meatballs. Pour the reserved sauce over the top.
Cook on high 2 to 3 hours or low 3 to 4 hours. Turn the slow cooker to warm until ready to serve.
