Fried Eggs/Curry Style
4 hard boiled eggs
1 T. coconut oil
1/2 teaspoon turmeric
1/2 - 3/4 teaspoon freshly ground pepper
1 sprig of curry leaves
Once pealed - Add small slits or poke holes in hard boiled eggs.
Melt coconut oil in saute pan. Add turmeric, black pepper and curry leaves.
Add eggs and fry until browned on all sides. Pour into serving bowl and serve immediately.
To make hard boiled eggs. Add eggs to pan and cover with water. Add 1 teaspoon salt. Bring to boil. Once boiling, turn off burner and let eggs sit in hot water for 10 minutes. Drain eggs and set aside or put in the refrigerator until ready to eat.
