4 green tomatoes

Salt and pepper

1 cup all purpose flour

1 teaspoon salt

1 teaspoon black pepper

1 cup cornmeal

1 teaspoon dried parsley

1 teaspoon paprika

½ teaspoon cayenne pepper

1 cup buttermilk

1 cup canola oil, or as needed

½ cup ranch dressing
-
2 tablespoons Cajun seasoning

2 teaspoons hot pepper sauce
For the flour coating

Dipping Sauce
Directions
Slice tomatoes in 1 inch rounds and season with salt and pepper.
Combine flour, salt and pepper in a shallow bowl.
Mix cornmeal, parsley, paprika and cayenne in a shallow bow.
Pour buttermilk in a small shallow bowl.
Dredge each tomato slice in flour to coat. Dip into buttermilk, and finish by pressing both sides of the tomato into the cornmeal mixture. Set aside until oil is heated.
Heat oil in a large pan and add coated tomato slices and cook until crispy and golden brown. Cook 2-3 minutes per side.
Drain on a plate lined with paper towels.
Dipping Sauce
Whisk ranch dressing, Cajun seasoning and hot sauce in a small bowl. Serve fried tomatoes with dipping sauce.
