Mushrooms Stuffed with Brie

Ingredients

3 T. butter
-
1 package white button mushrooms, cleaned and stem removed

4 cloves garlic, minced

3 T. fresh parsley, chopped

4 scallions, sliced thin

splash of white wine or broth (chicken/beef/vegetable)

1 wedge of Brie cheese
Directions
Preheat oven to 300°
Melt butter in saucepan. Add mushroom caps and sprinkle lightly with salt. Cook for 1 minute and remove mushrooms to a plate.
In the same saucepan add garlic, parsley and green onions. Add a splash of wine and let this cook for 1 minute until some of the wine evaporates. Remove from heat.
Take cooled mushrooms and place them top down in an oven proof dish. You need the bottom side up to stuff.
Cut rind of off brie and then cut brie into small cubes and press each cube into mushroom cap. Pour the garlic/parsley/onion mixture over the top.
Bake in oven for 15 minutes or until brie is melted.
Sprinkle some chopped parsley on top for presentation. Serve with some warm, crusty bread to soak up all the yummy juices.
