Salsa / Pico de Gallo
Quick recipe that is so versatile. Simply serve with tortilla chips or use to top on tacos, baked potatoes, hamburgers, veggie burgers. I've yet to have someone complain about homemade salsa.
6 plum tomatoes, chopped into small squares
1/2 red onion, chopped fine
1 jalapeno, chopped fine (remove seeds to remove heat)
1 lime, juiced
1/2 bunch cilantro, chopped
salt & pepper, to taste
1 garlic clove, minced
Add chopped ingredients to bowl, squeeze lime juice. Add salt and pepper.
Serve with tortilla chips or add as a condiment to your favorite burger or fish taco.
