1/2 cup Persian cucumber, unpeeled and grated
1 1/2 cups Greek yogurt
2 garlic cloves, minced
2 T. olive oil
1 T. white vinegar
1/2 teaspoon salt
1 teaspoon dill, minced
1 teaspoon mint, minced
Grate cucumber and set aside to drain.
Combine all the ingredients and add cucumber once you squeeze all the water out of it. Stir to mix all the ingredients.
Allow to sit in the fridge so the flavors blend together, at least 1 hour. Overnight is best.
