Apple Pecan Salad
8 cups mixed salad greens, your choice
1 cup chopped apple, (Envy, McIntosh, Granny Smith)
½ cup candied pecans
1 cup cucumber, halved and sliced on angle
2 green onions, thinly sliced
2 oz goat cheese

In a large bowl toss salad greens. Top with apple, pecans, cucumber, green onions and goat cheese. Set aside in refrigerator to chill.
When ready to serve. Toss with ¼ cup apple cider vinaigrette. Taste and add more dressing if needed.
