Cucumber Tomato Onion Salad
2-3 Persian cucumbers or cucumber of choice, cut on diagonal
1 large tomato, cut into chunks
¼ onion, sliced thin or chopped finely
1 T. Fresh basil, dill or parsley
2 T olive oil
1 T. Red wine vinegar
Salt and pepper
In a bowl, add all the ingredients. Fold to mix and set aside for 20 minutes before serving.
If storing, cover and keep in the fridge for 3-5 days.
