Ingredients

¼ cup olive oil

2 T. Lemon juice, freshly squeezed

1 T. Red wine vinegar
-
1 garlic clove, minced
-
1 T. Fresh parsley, chopped
-
¾ teaspoon honey
-
½ teaspoon salt or to taste
-
4 medium tomatoes, chopped (Roma works best)
-
1 medium persian cucumber, peeled and sliced into half moons
-
½ small red onion, sliced
-
¾ cup Kalamata or black olives, sliced
-
4 oz. Crumbled feta cheese
-
*optional - 1 avocado diced

Directions
Salad Dressing
Mix all the ingredients and add to a mason jar. Shake well to mix.
In a large bowl, add chopped ingredients and pour dressing over. Toss evenly to coat. Add chopped feta and stir gently to combine.
