Ingredients: ¼ cup olive oil; 2 T. Lemon juice, freshly squeezed; 1 T. Red wine vinegar; 1 garlic clove, minced; 1 T. Fresh parsley, chopped; ¾ teaspoon honey; ½ teaspoon salt or to taste; 4 medium tomatoes, chopped (Roma works best); 1 medium persian cucumber, peeled and sliced into half moons; ½ small red onion, sliced; ¾ cup Kalamata or black olives, sliced; 4 oz. Crumbled feta cheese; *optional - 1 avocado diced

Serve with any Mediterranean dish. Goes well anytime too as a fresh side salad. You can never have too many salad recipes.
