Tomato and Burrata Salad
Make this for any occasion. The simplicity of just a few ingredients makes the best food. Every time I eat this, it tastes better than I expect.
3 medium sized heirloom tomatoes, cut into bite sized pieces (or slices)
1 cup cherry tomatoes, cut in half
Handful of fresh basil, chopped
6 oz. Burrata cheese (one small round)
¼ cup olive oil
2 T. Balsamic vinegar
¼ teaspoon salt
¼ teaspoon pepper
For the dressing
In a small bowl or platter, add the heirloom tomatoes, top with cherry tomatoes and basil. Cut or tear the Burrata cheese into bite-sized pieces and place on top.
Mix dressing ingredients and drizzle over the tomato/cheese salad. Serve right away with your favorite toasted bread.
