Tomato Salad with Mozzarella pearls (Caprese)
3 tomatoes, chopped into small squares
1 shallot, diced finely
1 garlic, minced
8 oz. pearl mozzarella
6 basil leaves, chopped finely
1/4 cup olive oil
1 1/2 T. red wine vinegar
1/2 teaspoon salt
In a medium sized bowl, add chopped tomatoes, chopped shallot, minced garlic and mozzarella pearls.
Whisk together olive oil, vinegar and salt. Pour over salad and gently toss.
Sprinkle with freshly chopped basil. Fold basil into salad and sprinkle a little more on top.
