Tomato, Cucumber, Onion, Kalamata olive Salad
Eat this as a snack with tortilla chips or all by itself. Either way its delicious.
6-8 Persian cucumbers, diced
4 Roma tomatoes or cherry tomatoes, diced
1 small red onion, diced
1/4 cup Kalamata olives, diced
2 lemons, juiced
1/4 olive oil
1 teaspoon salt or more to taste
Dice cucumber, tomato, onion and olives into small pieces.
Mix dressing and pour over salad. Taste and add more salt if needed.
