Tomato, Mozzarella Salad with Basil
2 ripe heirloom tomatoes or any tomato. I like to use tomatoes that are different colors
8 oz. fresh mozzarella (packed in water)
8 fresh basil leaves
Olive oil to drizzle
Salt and pepper to taste
Slice tomato on the thick side. Cut the slices in half. Remove the mozzarella from the water and slice into thick slices using the same amount as you have of tomato slices.
Stack the tomato, mozzarella and basil on a plate until are slices are stacked. Drizzle with olive oil and sprinkle with salt and pepper. Serve!
