Ingredients

3 cups cooked white rice

3 tablespoons oil (avocado, peanut or olive oil)

3 green onions, sliced

3 garlic cloves, minced
-
1 teaspoon grated ginger (optional)

½ cup shredded carrots and/or peas

2 eggs, slightly beaten
-
2 tablespoons soy sauce
-
3 tablespoons fish sauce
-
2 tablespoons oyster sauce
-
½ teaspoon salt
-
½ teaspoon pepper
-
Chopped basil, green onion and lime wedges to serve
Directions
Prep all your ingredients since this dish comes together quickly.
Heat the cooking oil in a wok or large pan over medium-high heat. Add chopped green onions and garlic and fry quickly, about 1-2 minutes.
Add the shredded carrots and or peas and cook for one more minute.
Push the vegetables aside and pour in slightly beaten eggs. Scramble eggs quickly.
Add your cooked rice and stir to combine.
Now for the flavorings: add the fish, soy and oyster sauce and gently stir to combine. Using your spatula, spread the rice out to an even layer along the surface of the wok to let the rice brown slightly. Season with salt and pepper.
Top the rice with the chunk crab meat and stir gently to combine. When the crab is warmed through, add the additional chopped green onions and basil. To serve, finish with a squeeze of lime and your favorite chili paste or chili oil.
