This is hands down one of my favorite soups. It has so much flavor from the spice mix and is a healthy bowl of soup.

Ingredients

1 teaspoon each: salt, ground - turmeric, coriander, ginger, cumin, cardamom

½ teaspooon each: nutmeg, black pepper, white pepper, cayenne pepper, ground - aniseed, caraway seeds, fennel seeds

¼ teaspoon cinnamon and cloves

3 tablespoons olive oil

4 garlic cloves, minced

1 ½ teaspoons ras el hanout spice mix

3 tablespoons tomato paste
-
1 ½ cups vegetable stock
-
1 tablespoon soy sauce
-
1 -15 oz can chickpeas, rinsed

3 large handfuls of baby spinach, roughly torn

Greek yogurt
-
Harissa paste

Prepared couscous (I use Tri-color pearl couscous)

Ras el Hanout spice blend
Grind any whole spices and add all spices to a bowl to blend. You will have about 3 tablespoons of spice mixture. You can store the leftover in an airtight container for up to a month. This spice blend can also be purchased on line or find it in your larger grocery stores. I prefer to blend my own for freshness.
For the soup
In a medium pan over medium heat, add the olive oil, minced garlic and spice blend and cook for 1 minute.
Add the tomato paste and stir until the color deepens. This should only take 1 minute.
To the pan add your stock and soy sauce and bring to a boil. Lower heat to medium and cook broth for 10 minutes so the flavors meld.
Add chickpeas and simmer until they are warmed.
Add chopped spinach and stir until spinach has wilted. Taste broth and adjust for salt.
To serve
Prepare couscous per package directions. In a bowl, add a small scoop of couscous and gently pour a ladle of soup on top. Top this with a spoonful of Greek yogurt and harissa paste.

They sell harissa paste in the grocery store - one mild and one spicy version. You choose the spice. I use mild harissa paste.
