Ingredients

1 T. Olive oil

1 1/2 lbs. ground beef or turkey

1 large yellow onion, finely chopped

4 garlic cloves, minced

1/4 cup bell pepper, finely chopped

1 jalapeño, charred, deseeded and chopped.

2 cans Rotel tomatoes (diced tomatoes and green chilis)

2 cans 14.5 ounces each, tomato sauce

1/2 cup beef broth
-
2 - 16 oz cans kidney beans (or bean of choice)

2 1/2 T. Chili powder
-
1 T. Ancho chili powder
-
1 T. Garlic powder
-
1/2 teaspoon pepper
-
2 teaspoons paprika
-
2 T. Cumin powder
-
1/2 teaspoon coriander powder
-
1 teaspoon cocoa powder
-
1/8 teaspoon cinnamon
-
1 teaspoon dried Mexican oregano or regular dried oregano
Directions
In a medium sized pan, heat olive oil and add ground meat and cook until browned. Add onions, garlic, bell pepper and jalapeño. Cook until onions and bell pepper are tender.
In your crockpot, add the meat mixture and stir in the remaining ingredients. Set to low for 6 hours.
Recipe Note
Serve on the side: chopped onions, shredded cheddar cheese, diced jalapeños, Tabasco sauce and sour cream
