6 medium potatoes, peeled and quartered
1 stick butter
1 medium onion, diced
3 stalks celery, dices
5 slices of bread, cubed
Handful of chopped parsley
1 ½ cups milk
2 teaspoons salt
Pinch of pepper
Add potatoes to a pan covered with water. Boil until potatoes are soft, about 15 minutes.
In a large saucepan, melt butter and brown onion and celery about 5 minutes. Add bread cubes and brown bread cubes.
Drain potatoes and mash with milk, egg, salt and pepper. Add parsley and the onion, celery, bread cube mixture and fold into mashed potatoes.
Put mixture in a casserole dish and bake @350 for 1 hour until top is browned.
