Green Beans with garlic and lemon
2 T. olive oil
1 lb. green beans, ends trimmed and cut in half
4 garlic cloves, sliced
salt and pepper
In a large pot, add about 3 cups of water and bring to a boil. Add green beans and cook for about 3-5 minutes. You want the beans to still have a slight bite to them.
While beans are cooking. Heat 2 T. olive oil in a large skillet and fry sliced garlic until you can smell the garlic and then remove from heat and set aside.
When the beans are finished cooking. Drain them and add to the skillet with the garlic. Squeeze 1/2 lemon juice into the pan with a sprinkle of salt and pepper and stir. Serve and enjoy.
