Preheat oven to 375 degrees
Scrub red beets under running water. Now add to a roasting pan with a lid.
Pour enough olive oil on the red beets to cover. Rub the beets and sprinkle with salt and pepper.
Place pan with lid in oven and roast for approximately 45 minutes or until tender when poked with a fork.
Remove from oven and allow to cool. Now cut off top and bottom and using a paper towel, rub the beet until the skin peels off.
Use in your favorite recipe or salad.
