Roasted spaghetti squash
2 medium sized spaghetti squash, cut in half and seeded
Drizzle of olive oil
½ teaspoon salt
½ teaspoon pepper
Preheat oven to 400 degrees
Place squash on cookie sheet on a sheet of parchment paper.
Slice squash in half, and scoop out seeds. With the squash open faced - drizzle each with olive oil and sprinkle with salt and pepper. Turn face down to bake.
Bake/Roast in oven @400 degrees for 40 minutes. Remove from oven when a fork easily punctures the squash.
When the squash is cool enough to handle, using a fork, scrape the inside to create long spaghetti type strands.
Serve with any type of sauce. Treat it like spaghetti.
