If you do not like goat cheese, then just skip the goat cheese. People are missing out on polenta as a side dish for many meals. Its creamy, its simple, its delicious.
Polenta is ground corn (found near the flour/sugar in the grocery store). If you cant find polenta, you can substitute regular medium or coarsely-ground cornmeal instead. Don't use finely ground cornmeal or you'll have mush.
Creamy Polenta with Goat Cheese
You can leave out the goat cheese but I don't recommend that. Just cut the goat cheese in half.
4 1/2 cups water
1 cup polenta or yellow cornmeal
1 teaspoon salt
2 T. butter
4 oz. goat cheese
Bring 4 1/2 cups water to a boil. Add polenta to the water in a thin stream, whisking constantly to avoid lumps.
Reduce heat to simmer and cook for 15 minutes. Add salt and extra tablespoons of water as needed.
When polenta is done, add the butter and goat cheese. Check salt and adjust.
Serve with your favorite meat as a side dish or alone as a side dish.
