Coconut Lime Chicken

Ingredients

4 thin cut chicken breasts

1 ½ teaspoons salt

½ teaspoon garlic powder

1 tablespoon olive oil

1 yellow onion, chopped

4 garlic cloves, minced

2 - 13.5 oz can coconut milk
-
¼ cup cilantro, chopped

½ teaspoon lime zest
-
1 lime, juiced
-
3 green onions, thinly sliced

1 tablespoon cornstarch
-
¼ cup water
-
½ teaspoon red pepper flakes (optional)
Directions
Season the chicken with salt and garlic powder.
In a large skillet, heat oil over medium heat. Once the oil is hot, add the seasoned chicken breasts and cook until the chicken is browned on both sides. Transfer to a plate and set aside.
While pan is heated over medium heat, add a splash of olive oil and the onion and cook until soft, about 3 minutes. Stir in the garlic and cook for 1 minute.
Stir in the coconut milk, cilantro, lime zest, lime juice and green onions. Taste for salt and add a pinch if needed. Bring mixture to a simmer.
In a small bowl add the cornstarch and cold water. Stir to combine and slowly add the mixture to the simmering coconut milk. Stir until slightly thickened and add the chicken back to the pan. Cover with sauce and keep on a low simmer for 15 minutes.
Serve chicken and sauce over rice. Top with additional cilantro, chopped green onions and red pepper flakes.
