Ingredients

1 cup pecans, lightly chopped

1 cup unsalted butter - 2 sticks (85% butterfat preferred)

1 cup granulated sugar

¼ cup water
-
½ teaspoon kosher salt

1 teaspoon vanilla extract

1 cup chocolate chips (you choose - milk, semi-sweet, dark)

¼ cup pecans or almonds chopped finely for topping

Sea salt to sprinkle for topping (optional)
Directions
You will need a heavy sauce pan and thermometer to start.
Line a square 9x9 pan or cookie sheet with parchment paper. Sprinkle with copped pecans
In a heavy pan over medium heat, add the butter, sugar water and salt and bring to a boil. Once it boils, stir occasionally until the mixture reaches 300º. If you stir too much it will break, so stir gently.
Prepare your chocolate and additional chopped pecans or almonds.
Once the mixture browns and reaches the correct temperature, remove from the heat and add in your vanilla extract. Stir to combine and pour the mixture over the nuts. Sprinkle with chocolate.
Cover the pan with foil until the chocolate melts. About 2-4 minutes. Remove foil and spread the chocolate with an offset spatula.

Sprinkle the additional pecans and salt on top of the melted chocolate. Move to the refrigerator to harden for at least 1 hour.
Once hard, break into pieces and store in the refrigerator.
