Tamarind Date Chutney

Ingredients

1 ½ cups water

½ cup tamarind, peeled and deseeded

½ cup dates, pitted

½ cup jaggery (or substitute with brown sugar)

½ teaspoon kashmiri chili powder

½ teaspoon ginger powder, roasted

¾ teaspoon coriander powder, roasted

½ teaspoon fennel powder, roasted

½ teaspoon cumin powder, roasted

¼ teaspoon garam masala, roasted

½ teaspoon black salt or regular salt

Directions
Using an instant pot, add 1 ½ cups water into pan along with tamarind, dates, jaggery and red chili powder. Pressure cook on high for 10 minutes.
While the tamarind mixture is cooking, in a small pan on the stove add the spices and roast lightly until fragrant.
When steam releases, remove the mixture and add to a blender. Add the spices to the mixture and blend until smooth.
Pass mixture through a sieve into a bowl. Transfer the chutney to a clean glass jar and refrigerate.

I toasted whole spices and ground them for the spice powders
Note: You can also cook the tamarind, dates, jaggery and chili powder in a pot of water on the stove. Cook for 10 minutes or until softened. Follow the recipe.
