Baked Zucchini Garlic Bites
This tasty zucchini garlic bites recipe combines shredded zucchini with garlic, parmesan cheese, fresh herbs, and can be served with a warm marinara dipping sauce.
1 cup shredded zucchini, drained if needed
3 garlic cloves, minced
1/3 cup italian breadcrumbs
1/4 cup parmesan cheese, grated
1 egg, slightly beaten
2 T. fresh chives, chopped (if using dried - 1 T.)
1 T. fresh parsley, chopped (if using dried - 1/2 T.)
1 T. fresh basil, chopped (if using dried - 1/2 T.)
1 teaspoon oregano, chopped (if using dried - 1/2 tsp.)
pinch salt and pepper
Preheat oven to 400°. Line tray with parchment paper.
Add grated zucchini, garlic, and the rest of the ingredients to a small mixing bowl. Stir to combine.
With a small cookie scoop, form small balls or use hands to form balls, and place on lined tray.
Bake for 15-18 minutes until the bites are browned. Serve warm with marinara sauce.
