A mixture of cheddar, Gruyère and Laughing Cow cheeses make this fondue friendly for a whole crowd. Serve with a mixture of apples, broccoli, boiled/pan fried potatoes, cooked chicken sausage, soft pretzels. The choices are endless, but this list is some of my favorites.

Ingredients

3 cups of shredded cheddar and Gruyère cheese (Trader Joe’s sells a cheddar/gruyere block of cheese)

2 T. Cornstarch

2 triangles of Laughing Cow cheeses (for creaminess)

1 cup chicken broth
-
2 garlic cloves, crushed
-
1 teaspoon lemon juice (prevents cheese from clumping and separating)

¼ teaspoon black or white pepper
-
¼ teaspoon freshly grated nutmeg
Directions
In a bowl, add the mixture of shredded cheddar and Gruyère cheese and sprinkle with cornstarch. Stir until the cornstarch coats the cheese. Set aside.
Using your electric fondue pot, turn to #2 or #3 and add the chicken broth, lemon juice and garlic until the mixture starts to boil.
Once your mixture boils, slowly add in the shredded cheese coated in cornstarch a handful at a time. Melting each addition by stirring the mixture until it’s smooth. Add in the two small triangles of Laughing Cow cheeses until melted and cheese mixture is creamy. Add pepper and nutmeg and stir until combined.
Continue to adjust the heat on your fondue pot so your cheese does not burn.
Ready to serve with your favorite variety of fruits, vegetables, breads, cooked meat.
