Creamy Brussel Sprout Dip
1 ¼ cups Brussel sprouts, trimmed and sliced very thin
2 green onions, chopped
2 T. Olive oil
1 cup shredded mozzarella
¼ cup of freshly grated Parmesan
¾ cup mayonnaise
¾ cup Greek yogurt
2 garlic cloves, minced
2 T. Lemon juice
1/8 teaspoon black pepper
Optional: Chopped bacon bits for serving
Pita chips or freshly sliced veggies.
Preheat oven to 350 degrees.
In a baking dish, add your thinly sliced brussel sprouts and your finely chopped green onions. Sprinkle 2 T. Olive oil and stir to coat the veggies. Microwave for 2 minutes on high.
In another bowl, add grated cheese and remaining ingredients together and stir to combine.
Add the cheese mixture to the baking dish and stir to combine with brussel sprouts.
Bake @350 degrees for 30 minutes or until bubbly.
Sprinkle with chopped bacon bits. Serve with pita chips or fresh vegetables.
