Ingredients: 2 cups water; 1 T. Olive oil; ½ teaspoon kosher salt; 2 cups couscous - Moroccan (small couscous, works better than pearl couscous); ½ cup pomegranate seeds (or more to taste).; ½ cup pistachios, roasted then roughly chopped; ½ cup fresh mint, chopped; ½ cup parsley, chopped; 1 lemon, zested; ¼ cup olive oil; 4 T. Fresh lemon juice; ½ teaspoon kosher salt; Pinch of black pepper

This goes well with lamb tagine or grilled chicken. It is a pretty presentation with the red pomegranate seeds and the green pistachio, mint and parsley. Topped off with a citrusy lemon dressing.
